Milagorai (Pepper Rice) – Margazhi Thiruppavai Day 3 Special | A Temple-Style Recipe Filled with Warmth and Tradition
As the cool Margazhi mornings continue, every day of Thiruppavai brings a new opportunity to pause, pray, and cherish the traditions passed down through generations. Day 3 of Thiruppavai reminds us to come together in devotion with sincerity, simplicity, and a pure heart.
For me, Margazhi is incomplete without the comforting aroma of freshly roasted pepper and ghee filling the kitchen. Some recipes are elaborate, while others are beautifully simple. Milagorai (Pepper Rice) is one such timeless dish. Made with just a handful of pantry ingredients, it carries the warmth, flavour, and nostalgia of temple kitchens and our grandparents' homes.

Why Milagorai During Margazhi?
Margazhi falls during the coldest part of the year, and our ancestors wisely included ingredients that naturally keep the body warm. Black pepper is one such treasured spice. Known in every South Indian kitchen for its warming properties, pepper adds both flavour and comfort during chilly mornings.
Combined with fragrant ghee and freshly cooked rice, Milagorai becomes a simple yet satisfying offering that reflects the spirit of Margazhi—humble, nourishing, and deeply rooted in tradition.
Milagorai (Pepper Rice) Recipe
Ingredients (Serves 2–3)
For the Rice
1 cup raw rice
Water, as required
Salt, to taste
For the Milagorai Podi
2 tsp whole black pepper
1 tsp urad dal
1 tsp chana dal
For Tempering
2 tbsp ghee
½ tsp mustard seeds
Few curry leaves
8–10 cashew nuts (optional)
A pinch of asafoetida (hing)
Method
Step 1 – Cook the Rice
Cook the rice until soft and fluffy. Spread it on a wide plate and allow it to cool slightly. This helps the grains remain separate while mixing.
Step 2 – Prepare the Milagorai Podi
Dry roast the black pepper, urad dal, and chana dal on a low flame until they become aromatic. Allow the mixture to cool completely and grind it into a slightly coarse powder.
Step 3 – Prepare the Tempering
Heat the ghee in a pan. Add mustard seeds and allow them to splutter.
Add curry leaves, cashew nuts, and a pinch of asafoetida. Fry until the cashews turn light golden.
Step 4 – Add the Pepper Mixture
Add the freshly ground Milagorai podi to the tempering and sauté gently for a few seconds on low flame. This allows the pepper to release its wonderful aroma without burning.
Step 5 – Mix the Rice
Add the cooked rice and salt. Mix gently so every grain is coated evenly with the pepper mixture.
Switch off the flame.
Offer it as Neivedyam before serving your family.

The aroma of roasted pepper, the richness of ghee, and the quiet devotion of early morning prayers create moments that stay with us long after the meal is over.
